One of the easiest forms of indoor gardening for kids is the root-top garden. Cut the tops off root vegetables like turnips, carrots, beets and parsnips. If the leaves are still on the vegetables, cut them off, leaving half an inch of stem. Place the root-tops on a dinner plate, with just enough water to cover the bottom. You can make your garden more attractive by covering the spaces between the root-tops with clean pebbles. Put the plate on a window sill where it will get plenty of sunlight. Remember to keep the root garden well watered. Soon leaves will begin to sprout, and in two or three weeks you will have a leafy garden.

I would do a herb garden you could then use the herbs in some food, make it together with them they will like eating what they have grown . You can find easy kits everywhere that are easy to grow.

You could try an herb garden. I dont think you would need much more than a good draining container, soil, water and sunlight.
Or, if you had an old unused aquarium, you could fit it with a plant light and grow basil, chives, rosemary, etc.
When I lived in NYC I grew Sunflowers in my Living room 6 of them in pots across the wall. They were beautiful and grew quickly – plus we got to roast the seeds and make sunflower butter for tea cakes! You could also try a hanging tomato or strawberry basket they are so lovely and you get to eat what you grow! Kids love to harvest and it is so rewarding. Good Luck!
I would suggest growing lima beans or sunflower seeds in a paper cup. Just add dirt, water and some sun. You can also cut each child a piece of a Pothos (devil’s ivy) plant (since almost everyone has one in their home) and let them grow it in a glass of water or cup of dirt. It’s just about the easiest plant on the face of the Earth to grow.

Why don’t you do a project like they do in school? Like planting a bean and watching it grow? Not knowing the age of your kids makes it hard to answer. But Chia pets are still a cool option too.

Wal-mart sells pots, dirt, and seeds all in one package. All you have to do is add water according to the directions. They have marigolds and other easy to grow plants. My kids loved them. They are inexpensive also!
